If option 06 (interleaving to 20 GS/s) is fitted to AWG7102+ can you still get the two channels at 10 GS/s?

Yes.  With AWG7102 fitted with option 06, an extra set of connectors is added to give single channel 20 GS/s interleaved.  You can select to either use this output or to use the normal 2 channel 10 GS/s outputs.
